Caroline Copenhaver, BS is the Compost Facility Coordinator at Marshall University’s Sustainability Department, where she plays a key role in advancing waste reduction, composting education, and environmental sustainability initiatives on campus and in the surrounding Huntington community.
Born and raised in Charleston, West Virginia, Caroline developed a lifelong passion for the outdoors, gardening, and sustainable living from an early age. Her interest in environmental stewardship grew through hands-on experience gardening alongside her mother and grandmother.
Caroline earned her Bachelor of Science in Agriculture with an emphasis on Environmental Protection from West Virginia University in 2011, grounding her work in ecological principles and land stewardship.
Before joining Marshall University, she worked as an Agricultural Extension Agent at West Virginia State University, where she taught both youth and adult learners about sustainable agriculture and environmental practices.
At Marshall University, Caroline oversees operations of the university’s composting efforts, including its commercial composting facility — the first of its kind in West Virginia. In this role she coordinates compost processing, supports community outreach and education, and helps drive initiatives that divert organic waste from landfills and transform it into valuable soil amendments. She frequently collaborates with campus partners and community members on workshops, tours, and sustainability programming.
Caroline’s work is rooted in practical experience and passion for sustainability. She is committed to inspiring others to adopt composting practices and to creating meaningful environmental impact through education, engagement, and responsible waste management.

She is the co-owner of Cooper Family Chiropractic, a family-owned practice she runs alongside her husband, Dr. Eric Cooper, where their shared vision centers on compassionate, collaborative, and whole-family care. Dr. Destiny is deeply passionate about supporting women throughout pregnancy, birth, and the transition into motherhood, believing that walking alongside a woman as she becomes a mother is one of the most beautiful and meaningful experiences in healthcare. Her approach helps women feel strong, comfortable, and confident through pregnancy and beyond by integrating chiropractic care, nutrition, and movement.
After relocating from Chicago to Huntington in 2012, Destiny focused on cultivating strong networks of care providers who work together to help families achieve their health goals. She collaborates closely with OB-GYNs, midwives, lactation consultants, pediatricians, dentists, occupational and speech therapists, and functional wellness providers. This team-based approach, grounded in clear communication and mutual respect, allows families to experience truly comprehensive and supportive care.
A proud member of the International Chiropractic Pediatric Association (ICPA), Destiny has completed more than 200 hours of postgraduate training and earned her CACCP (Certified by the Academy Council of Chiropractic Pediatrics) in 2016. She has dedicated her career to helping infants and children reach their optimal health through gentle, specific chiropractic care. Her kid-friendly, energetic visits are centered on whole-family wellness, and she finds great joy in watching children thrive after challenges with sleep, motor development, attention, or regulation. She firmly believes that investing in children’s wellness is essential to building a healthier future for families and communities.
Destiny has extensive training and clinical experience in tongue ties, neonatal reflexes, myofascial release, and cranial therapy. She specializes in working with interdisciplinary teams to address tethered oral tissues and their wide-ranging effects on breastfeeding, sleep, chewing, speech, and overall body biomechanics. Through pre- and post-revision cranial therapy and coordinated care, she has helped build a strong tri-state network dedicated to achieving optimal oral function outcomes. Her commitment to education, thoughtful referrals, and individualized care ensures that families facing complex challenges feel supported every step of the way.

Gail Moore, MSN, APRN, FNP-BC, is CEO of Moore Lifestyle Medicine.
Gail’s journey from conventional medicine to more holistic wellness is a direct result of her own firsthand experience as a nurse practitioner and mother.
When her children faced some health challenges, she began searching for solutions. Instead of relying on quick fixes to relieve symptoms, Gail wanted to discover what actually caused the symptoms. As a perpetual student and lover of learning, she dove into research and found that she wasn’t the only person in search of answers.
What she learned led to a paradigm shift that changed the course of her career. Armed with knowledge of the body’s ability to heal, Gail went back to school for an Integrative Medicine certification. Instead of seeking another position in corporate medicine, she made the leap into private practice. Her office is housed inside a locally owned health market, Wholi Moli.
Gail started Moore Lifestyle Medicine to make a real, lasting difference in the lives of her patients by inspiring them to prioritize their wellness and get to the root of their problems.
Gail is a board-certified Family Nurse Practitioner and Advanced Practice Registered Nurse. She holds certifications in IV Nutritional Infusion, Bioidentical Pellet Therapy, and Integrative and Functional Medicine.

Sarah Haddox is a women’s health practitioner and homebirth midwife with a foundation in physical therapy and a passion for physiologic birth. She earned her Master’s degree in Physical Therapy from West Virginia University in 2005 and spent three years working in inpatient clinical settings before stepping away to begin her family. Through her own hospital birth experience with an obstetrician, Sarah discovered that homebirth with a midwife more closely aligned with her belief that the human body is intentionally designed to grow and birth babies without routine intervention. She went on to have three homebirths, experiences that deepened her commitment to supporting women through pregnancy, birth, and postpartum with trust in the body’s natural processes. Alongside raising her family, Sarah expanded her training in women’s health and breastfeeding, becoming a lactation specialist as well as a pregnancy and postpartum corrective exercise specialist. In 2017, she had the opportunity to study under a traditional, unlicensed midwife—an experience that helped shape her understanding of the kind of midwife she aspired to become. By 2021, Sarah began serving her own homebirth clients and has continued that work to the present day. She has now attended more than 70 natural, physiologic births and remains dedicated to supporting women and families seeking holistic, relationship-centered maternity care. Sarah hopes that future West Virginia legislation will continue to protect the role of traditional midwives, allowing women to have meaningful choices in how and where they give birth.
